The dish might have come from Iran, but is enjoy a lot in Azerbaijan with lots of herbs!


Kükü (Azerbaijani)
Serves 2-4

mix herbs: cilantro, dill,  basil, etc.
4 organic eggs
2 grated organic garlic cloves
minced organic spring onions
2 tsp. (30 g) (dairy-free) butter with a drop of olive oil
1 tsp. (4 g) sumac* or substitutions: za'atar; lemon juice + zest; paprika; ground coriander

optional ingredients:

  • watercress
  • spinach
  • wild garlic
  • crushed walnuts
  • Swiss chard
  • beet greens
  • sweet green cabbage
  • etc.
optional servings:
  • tomato salad
  • organic cucumber and (dairy-free) yogurt dish
  • etc.


bir 1. Chop the berbs and onions.


iki 2. Whisk the eggs with garlic.


üç 3. Add the herbs (except the sumac) and any optional ingredients.


dörd 4. Heat a frying pan over medium-low heat.


beş 5. Add the egg mixture and cook, without teaching it, about 5 minutes.


altı 6. Cover the pan with a plate and turn it upside-down onto a plate.


yeddi 7. Slide it back in the frying pan and cook a few minutes.


sekkiz 8. Serve from the frying plan or slide it onto a serving plate.


doqquz 9. Sprinkle the top with the sumac.



*Sumac is also known as Elm Leaved Sumac, Sicilian Sumac, Sumach, and Sumak. It is a Middle Eastern spice made from drying flesh and skin of the fruit form the sumac trees.
