If you like to add a new flavor to fish, try this dish.
Serves 4

1/3 cup (45 g) (dairy-free) organic butter
1 cup (130 g) (gluten-free) flour
4 wild-caught tilapia fillets
organic sliced mushrooms
minced organic shallots
minced organic garlic clove(s)
2-3 springs of thyme or dry thyme
1/4 cup (60 ml) whisky or 4 tsp. (20 ml) vanilla extract
2 Tbs. (30 g) (dairy-free) organic (dairy-free) cream cheese
zest and juice of 1 organic lemon
black pepper to taste

1. Melt 2 Tbs. (30 ml) of butter in a skillet over medium heat.
2. Whisk the flour and black pepper on a plate.
3. Coat the fillets in the flour mixture.
4. Cook the fillets until they turn brown, about 4-5 minutes, or a temperature of 145F/63C
5. Remove the fish.
6. Melt the rest of the butter in the skillet.
7. Sauté the mushrooms, garlic, shallots, and thyme.
8. Add the whisky/vanilla extract.
9. Cook to reduce to half the amount.
10. Stir in the cream cheese.
11. Add the lemon juice. Stir.
12. Garnish with lemon zest.
