There is guacamole, and then there is Guacamole with a "kick"!
Guacamole al humo (Spanish)
Makes about 2 cups (260 g)
Preheat the boiler
or use a skillet
1 serrano or jalapeño chile or more to taste
2 unpeeled organic garlic cloves or more
1 slice organic white onion or more
1 Tbs. (15 ml) organic lime juice
3 Tbs. (18 g) chopped cilantro leaves and upper stems
3 ripped organic avocados
BROILER
1. Put the chile, garlic cloves and onions slice on a baking sheet lined with foil.
2. Broil for 5-8 minutes, turn them once.
SKILLET
1. Heat a skillet over medium heat.
2. Add the chile, garlic, onions and cook 3-4 minutes, turn them once.
3. When they cool, peel the garlic and cut the stem from the chile.
4. Chop the chile, garlic and onion.
5. Place in a bowl and add the lime juice. Mash into a paste.
6. Add the cilantro and avocados. Mash.
