Αυγά και πατάτες
/avgá kai patátes/
Serves 2
organic tomatoes, chopped
chopped basil
minced organic garlic
olive oil
organic potatoes, diced into cubes
organic eggs
chopped oregano
paprika
-use letters for numbers-
1st, 2nd, etc.
ένα /éna/ Αʹ Purée the tomatoes in a food processor.
δύο /thio/ Βʹ Add the basil, garlic, 2 Tbs. (30 ml) olive oil, black pepper, and pulse.
τρία /tría/ Γʹ Pour into a skillet over low heat and cook, covered, about 20-25 minutes.
τέσσερα /tessera/ Δʹ Add potatoes into oil over medium-low heat. Fry for 5 minutes, then cover and reduce heat to low. Steam until done.
πέντε /péndi/ Εʹ Crack the eggs into the tomato sauce. Cook on low heat until they set, about 6 minutes.
έξι /éxi/ Ϛʹ Remove the potatoes and drain on paper towels. Place in a bowl.
εφτά /eftá/ Ζʹ Sprinkle with black pepper, paprika, and oregano.
οκτώ /októ/ Ηʹ Remove the eggs with a slotted spoon and place them on a plate with the potatoes.
εννέα /enéa/ Θʹ Spoon sauce over the top and serve.
