If you are serving cooked beans, fish, or food with a rich sauce, add this clean broth before the meal. It will help absorb and process fat and protein. It is a nice, summer broth served chilled, also.
大根コンソメ (Japanese)
/daikon konsume/
Makes 4 cups (960 ml)

4 cups (960 ml) water
1/2 organic red onion, thinly sliced
4-5 dried shiitake mushrooms
1 cup (240 ml) thinly sliced daikon
soy sauce or gluten-free liquid aminos
parsley or organic green onions

/ichi Bring to boil the water and onions over medium heat.

/ni/ Add the daikon and mushrooms.

/san/ Cover, reduce heat to low, and cook about 7 minutes.

/shi/ Season lightly with soy sauce/liquid aminos.

/go/ Simmer another 4-5 minutes.

/roku/  Garnish with parsley or green onions.
