German soups are diverse, use a wide variety of ingredients, mostly what is in season. So for the fall, pumpkin is #1 ingredient. 
Kürbissuppe (German)
Serve 2

little organic ginger, thinly sliced
littler  chili flakes, seeds removed, cut into thin rings
2 Tbs. (30 ml) (dairy-free) organic butter
1 chopped organic onion
1 pound (455 g) pumpkin, cut into cubes
organic potatoes, cut into cubes
3 cups (720 ml) organic vegetable broth
1 cup (240 ml) (dairy-free) organic cream or yogurt
juice of 1 organic lemon
+4 slices of (sodium nitrate free) ham
herbs to taste: galic, coriander, cumin, allspice, cinnamon, nutmeg, cardamom, and/or coves


eins 1. Met the butter and sauté the onions.


zwei 2. Add the pumpkin, potatoes, ginger, and chili. 


drie 3. Pour in the broth and simmer for 15 minutes.


vier 4. Purée the soup.


fünf 5. Add the cream/yogurt and bring to a boil.


sechs 6. Add the lemon juice.


sieben 7. Microwave the slices of ham for a minute or two, then roll each slice.


acht 8. Small plates of each herb, roll the ham onto ones of your choice, serve with the soup.

It is one of the most popular soups you can made at home, on a nice, cold winter's day. Double the recipe, cook and freeze for another day. 

Serves 6
Preheat the oven to 375F (190C)

1/2 pound (225 g) boneless, skinless organic chicken breast
black pepper
1/2 Tbs. (7,5 ml) olive oil
2 tsp. (10 g) (DF) organic butter
1/2 diced organic onion
2 organic celery stalks
1/2 Tbs. (4,5 g) minced organic garlic
1/2 tsp. (1 g) each: tarragon and oregano
1 tsp. (2 g) sweet Hungarian paprika
1/4 cup + 1 Tbs. (45 g) (GF) flour
4 cups (10 dl) organic chicken broth
1 ( 7 1/4-ounce) (180 g) diced organic tomatoes with the juice
3/8 cup (2 ml) (DF) whipping cream, evaporated milk, or half n' half
1 cup (130 g) organic spinach

1. Season the chicken with black pepper.
2. Place on a baking sheet and bake for 15-20 minutes. 
3. Remove from the oven and cool.
4. When cool enough, dice the meat and set aside.
5. Heat the oil over medium heat and add the butter. Heat until the butter melts.
6. Sauté the onions and celery about 6 minutes..
7. Add the garlic and spices. Cook and stir for 3-4 minutes.
8. Add the flour and stir. 
9. Slowly whisk in the chicken broth and bring to a boil.
10. Add the tomatoes and cream.
11. Reduce heat and simmer for 20 minutes.
12. Add the diced chicken and simmer 10 more minutes.
13. Before serving, stir in the spinach.
 


There are many recipes for this pudding, not just in Lithuania, but also in Germany and Denmark. Serve as a side-dish.
Pudingas su keptomis bulvėmis ir obuoliais (Lithuanian)
Serves 4
Pre-heat the oven to 400F (200C)

1 pound (455 g) each organic potatoes (unpeeled) and apples (peeled), cut the potatoes into evenly sized pieces
1/2 cup (65 g) (dairy-free) organic butter
2 tsp. (10 g) organic sugar
nutmeg
3/4 cup (180 ml) (diary-free) organic milk
1/4 cup (60 ml) (diary-free) organic cream
(gluten-free) breadcrumbs

venas /vienn-as/ 1. Cover the potatoes with water and bring to boil.


du /doh/ 2. Lower the heat and simmer until you can poke a knife into the potato.


trys /trees/ 3. Sauté the apples in half the butter.


keturi /ket-u-reh/ 4. Add sugar and nutmeg to taste.


penki /penkay/ 5. Drain the potatoes, peel while hot.


šeši / shey-shey/ 6. Mash them with the milk.


septyni /sept-teen-knee/ 7. Add the apples mixture, plus the cream. Mash more.


aštuoni /ash-tony/ 8. Pour the mixture into a baking dish.


devyni /dev-E-neh/ 9. Spread the breadcrumbs on top and bake about 25 minutes.
