The potatoes originated in Peru or Bolivia and were brought to Spain by the early explorers, then spread throughout Europe.

Les Papes Bullides (Catalan)
Las Papas Hervidas (Spanish)
(Boiled potatoes)
Serves 4

1 1/2 pounds (675 g) organic potatoes
5 Tbs. (75 ml) olive oil
4 sliced organic garlic cloves
1 tsp. (5 ml) each: cumin and crushed chilies
3 tsp. (15 ml) paprika
2 Tbs. (30 ml) red wine vinegar
1 organic red bell pepper, sliced

un 1. Cook the potatoes in boiling stated water until tender when poked with a folk.

dos 2. Drain, peel or not.

tres 3. Heat the oil and sauté the potatoes until golden color.

quatre 4. Crush together the garlic, chilies, and cumin.

cinc 5. Mix in the paprika and vinegar.

sis 6. Add the garlic mixture to the potatoes with the bell pepper. Cook about 2 minutes.

set 7. Serve warm.

Traditionally, this soup was cooked in a large earthenware pot and served during Lent in Bulgarian monasteries. A good, hardy, bean soup is always good any time of the year.

/supa ot bob/
Serves 4

2 Tbs. (30 ml) olive or sunflower oil
2 each organic diced bell peppers 
1 each organic diced: onion and parsnip
2 organic carrots, sliced
1 tsp. (5 g) paprika or more to taste
dried chili flakes to taste
2 crushed organic garlic cloves
3 cups (700 ml) organic vegetable stock
1 1/2 cup (240 g) each organic rinsed: navy beans and kidney beans or 3 cups (280g) can of 3-beans
chopped parsley and mint
1 Tbs. (15 ml) olive oil
2 Tbs. (30 ml) (dairy-fee) soured cream, crème fraîche, or yogurt

optional: slices of avocado on top


eдин /edin/ 1. Heat 2 Tbs./30 ml oil in a pan over medium heat.

две /dve/ 2. Cook the peppers, onions, parsnips, and carrots, about 7 minutes.

три /tri/ 3. Add the stock and all the beans. Increase the heath to medium-high. Bring to a boil.

четири /chetiri/ 4. Turn to simmer and cook for 20 minutes.

пет /pet/ 5. Remove from the heat and pour into bowls.

шест /shest/ 6. Top with little olive oil, cream/yogurt, parsley, mint, and optional avocado.

 Make a few days before and heat for a last-minute dinner.


Cazuela De Fajitas De Pollo (Spanish)
Serves 4
Preheat oven to 350F (175C)

(Use organic ingredients.)

shredded cooked chicken
olive oil
each thinly sliced, organic: bell pepper and onion
(dairy-free) goat cheese
(dairy-free) shredded cheese
black pepper
fajita seasoning (see below)
green chiles or green chili sauce
optional: fire roasted tomatoes
choice of garnishes:
  • chopped cilantro
  • chopped parsley
  • sliced  avocado
  • lime juice
  • (dairy-free) yogurt
  • sour cream
  • hot sauce...

1. Lightly grease or spray a baking dish.
2. Heat the oil over medium-high heat and sauté the pepper and onions.
3. Remove from the heat and add the chicken.
4. Combine the cheeses, fajitas seasoning, black pepper, chiles, optional roasted tomatoes
5. Add the mixture to the chicken. Toss.
6. Spread into the baking dish.
7. Add some cheese on top.
8. Bake about 20 minutes.
9. Remove and garnish the top.

Fajitas Seasoning Mix
(Use all for this recipe)
1 tsp. each:
chill powder
paprika
garlic powder
cumin
oregano

dash of black pepper

1. Stir altogether.

P.S. Make more and store in a airtight container for up to 3 months.
