Though tofu originated in China nearly 2 000 years, it has found its way into many East Asian and Southeast Asian cuisines. Benjamin Franklin was the first American to mention "Towfu" in a letter in 1770 while visiting London. The first tofu company in the U.S. was in 1878. But, it was not well known until middle of the 20th century. 

Korean tofu is marinated in various spices and varies from family to family.

두부 (Korean)
/dubu/

1 package of organic, firm tofu
3 Tbs. (45 ml) soy sauce or gluten-free liquid aminos
4 Tbs. (60 ml) water
garlic minced (to taste)
1 Tbs. (6 g) paprika and for more heat, cayenne pepper 
1 Tbs. (15 g) organic honey
1 Tbs. (15 ml) sesame oil
organic green onions, chopped
sesame seeds

일 /il/ 1. Press the tofu with heavy object for 15 minutes to release the water or heat in the microwave for 4 minutes.


이 /ee/ 2. Cut into small squares.


삼 /sam/ 3. Fry in the oil until it turns brown.


사 /sa/ 4. Whisk: soy sauce/liquid aminos, water, garlic, spices,and honey.


오 /oh/ 5. Pour the sauce over the tofu.


육 /yook/ 6. Garnish with green onions and sesame seeds.


칠 /chil/ 7. Serve as a side dish.

Serves 4

Meatballs:
1 pound (455 g) of organic ground lamb or chicken
2/3 cup (85 g) (gluten-free) bread crumbs 
1 organic egg
2 Tbs. (30 ml) soy sauce or (GF) liquid aminos
2 tsp. (4 g) each: grated garlic and ginger 
olive oil
1/2 cup (120 ml) organic orange juice
optional: Sriracha sauce for "heat"

Sauce:
2 Tbs. (30 g) each organic: honey and chopped green onions
2 Tbs. (15 ml) rice winer vinegar
1 Tbs. (15 g) organic cornstarch + 2 Tbs. (30 ml) water
organic orange zest
1 tsp. (5 g) sesame seeds
1/4 cup (30 g) organic brown sugar

Serve:
organic: cooked rice, streamed broccoli, and sautéed snow peas

~Pan fried or baked in over 425ºF/220ºC (inside temperature chicken 375ºF/191ºC, lamb 145ºF/63ºC)~

1. Mix the chicken/lamb, breadcrumbs, egg, soy sauce/liquid aminos, green onions, garlic, ginger, brown sugar, and optional Sriracha.
2. Form into 12 meatballs.

3. Pan fry: Sear on both sides for 80-10 minutes.
3. Bake in the oven for 15 minutes.

4. Simmer the orange juice, honey, and vinegar.
5. Whisk in the cornstarch and water to thicken
6. Cook about 5-8 minutes.
7. Return the meatballs in the sauce for another 2 minutes.
8. Serve over rice with broccoli and snow peas.
9. Garnish with green onions and sesame seeds.








 

 

Hawaiian cuisine is a reflection of  a mix of cultures from Polynesia, North America, East Asia, and Portugal. Beef was introduced by the Mexican cowboys working on cattle ranches. 


Serve as main meal or as appetizers.

'i'o 'i'o (Hawaiian)

serves 12


~Use organic ingredients as much as possible.~


3 pounds (1.365 g) of frozen meatballs ('i'o 'i'o)

1 can pineapple chunks, drained and reserve the juice

1 bell pepper, cut into chunks

minced onion

1 cup (240 ml) barbecue sauce or ketchup

1 Tbs. (15 ml) Worcestershire sauce

1/4 cup (60 ml) soy sauce or gluten-free liquid aminos

1/4 cup (60 ml) rice wine vinegar or apple cider vinegar

1/4 up (30 g) brown sugar

1 Tbs (15 g) grated ginger or 1/4 tsp. (dash ot two of powder ginger)

3 garlic cloves

2 Tbs. (30 g) chopped chives

sesame seeds

cooked rice (for main meal)


ʻekahi 1. Place in the a slow cooker: frozen meatballs, pineapple, bell pepper, and onion


ʻelua 2. Whisk BBQ sauce/ketchkup, soy sauce/liquid aminos, Worcestershire, vinegar, and sugar.


ʻekolu 3. Whisk in the ginger and pour over the meatballs. 


ʻehā 4. Cook high for 2-3 hours.


'elima 5. Serve with chipped chives and sesame seeds or with rice for main meal.

  I usually do not add fruit to a stir fry, but I have leftover mango from the Tofu Mango Dessert...

豆腐とマンゴーの炒め物 (Japanese)
/tōfu to mangō no itamemono/
Serves 4
Cooked organic rice

Mango Sauce マンゴーソース /mangōsōsu/:
1 organic mango, peeled, cored, and chopped
2 Tbs. (30 ml) each: GF liquid aminos and organic lime juice
1 tsp. (4 g) each: cumin, cornstarch, and chili paste

Japanese

i /long e/

一 /ichi/ 1. Use a food processor or blender to blend all the ingredients.


Stir fry 炒める /itameru/:
olive oil
1 package of organic extra firm tofu, drain and pressed out the liquid for 30 minutes or place in the microwave for a minute or two
chopped organic garlic
grated organic ginger
chopped organic bell pepper
organic onion, cut into fourths
organic spinach
chopped zucchini
sesame seeds

二 /ni/ 2. Cut the tofu into bite-size squares or triangular shapes.


三 /san/ 3. Heat the oil in a wok or a skillet over medium heat. 


四 /shi/ 4. Add the tofu in small batches and cook until lightly browned. Keep flipping to brown on all sides.


五 /go/ 5. Remove the tofu.


六 /roku/ 6. Add more oil and sauté the ginger. Leave in the pan or remove.


 七 /shichi/ 7. Sauté the vegetables.


 八 /hachi/ 8. Reduce the heat and add the tofu and sauce.


 九 /kyuu/ 9. Add a little (GF) flour and stir until the sauce thickens.


 十 /juu/ 10. Place in a bowl and sprinkle with sesame seeds over the rice.

Serve on a plate or

Laiki palai paina (Hawaiian)
Serves 4

2 cups (260 g) organic cold cooked rice

2 Tbs. (30 ml) each: soy sauce (or gluten-free liquid aminos) and olive oil
1/2 diced organic each: onion, red pepper, peas, and carrots
1 organic garlic, minced
1 Tbs. (15 g) each: sesame seeds and ginger
1 1/2 cups (195 g) organic pineapple (cut into small pieces)
1 tsp. (5 ml) each: oyster sauce or fish sauce, and sesame oil
chopped organic green onions or scallions
2 organic eggs
chopped nitrate free ham
cashew nuts

ʻekahi 1. Heat a wok over medium heat, then add the oil.


ʻelua 2. Add the onions, red peppers, peas, ham, carrots, cashew nuts, and pineapple. Cook until they are softened.


ʻekolu 3. Add the garlic and ginger. Cook a few minutes.


ʻehā 4. Remove mixture and scramble the eggs in the wok.


ʻelima 5. Return the vegetables mixture and add the cooked rice, oyster/fish sauce, sesame oil, and soy sauce/liquid aminos. Stir and cook a few minutes.


ʻeono 6. Plate the rice and sprinkle with green onions/scallions and sesame seeds.


Sesame is also called "benne". Many wild plants occur in Africa and some in India. It is one of the oldest oilseed crops known, domesticated over 3000 years ago. It might help the heart and blood pressure.

胡麻豆腐 (Japanese)
/gomadōfu/
 Serves 2
Preheat the oven to 350F (175C)

I. Tofu 豆腐 /tōfu/
14 ounce (400 g) organic firm tofu
3 Tbs. (45 g) cornstarch
1 Tbs. (15 ml) olive oil

II. Sauce ソース /sōsu/
1/2 cup (120 ml) water
2 tsp. (10 g) cornstarch
3 Tbs. (45 ml) soy sauce or gluten-free liquid aminos
2 Tbs. (30 g) organic tomato paste
1 tsp. (5 g) organic brown sugar
2 tsp. (10 ml) rice wine vinegar

III. Additonal:
1 Tbs. (15 ml) sesame oil
2-3 organic garlic cloves
piece of ginger
pinch or two of chili flakes

IV. Serve with
toasted sesame seeds
organic spring onions
cooked rice
or stir-fried vegetables 

i /long e/

一 /ichi/  Mix the tofu, cornstarch, and oil.

二 /ni/   Place on a baking sheet and back 20-30 minutes until crispy.

三 /san/  Max all the ingredients for the sauce in a jar.

四 /shi/   Sauté the ginger, garlic, and chili flakes in sesame oil for about 2 minutes.

五 /go/  Add the sauce and cook until it thickens.

六 /roku/  Stir in the tofu.

 七 /shichi/  Top with sprinkle of sesame seeds and spring onions.
