We have a lot of berries from U-Pick. Instead of freezing most of them, a nice dessert would be great tonight.
Serves 12
Preheat the oven to 375F (190C)

1 pound (455 g) organic strawberries, cut in half
6 ounces (175 g) each: two other types of organic berries
1/4 cup (30 g) organic sugar or less or not at all
1/3 cup (45 g) cornstarch
1 cup (130 g) organic rolled oats
1/3 cup (45 g) organic brown sugar (as much or less you desire)
1/3 cup (45 g) (gluten-free) flour
pinch or two each ground: cinnamon and cardamom
6 Tbs. (90 g) cold (dairy-free) butter, cut into small pieces
(dairy-free) ice cream or yogurt

1. Coat a square baking dish with nonstick cooking spray.
2. In a mixing bowl, combine the all the berries, sugar, and cornstarch.
3. Mix carefully and pour into the baking dish.
4. For the topping, in a food processor or by hand with two forks, combine the rolled oats, brown sugar, flour, cinnamon, and cardamom.
5. Add the butter and process/mix about 10-15 minutes, until the mixture is crumbly.
6. Scatter the topping over the berry mixture.
7. Bake 40 minutes until fruit is bubbling and topping is golden.
8. Let stand for 15 minutes.
9. Serve warm, at room temperature, or chilled.
10. Top with ice cream or yogurt.
11. Store leftovers in an airtight container.


For a quick breakfast or snack, these muffins are just the right thing.
Make 10 muffins
Preheat the oven to 375F (190C)

2 cups (300 g) organic cashews (nut allergy: use sunflower or pumpkin seeds)
2 organic eggs
1 cup (245 g) organic applesauce
1 cup (170 g) organic chopped strawberries
2 Tbs. (40 g) organic honey
2 tsp. (10 ml) vanilla extract
1/2 tsp. (2,5 g) baking soda
1 tsp. (5 ml) apple cider vinegar

1. Line a 12-cup muffin pan with 10 foil liners (If using paper liners, grease them with a a little cooking spray).
2. In a blender or food processor, combine the cashews, eggs, applesauce, honey, vanilla, and baking soda. 
3.  Blend until the batter is smooth and no cashew pieces remain.
4. Add the cider vinegar and blend again.
5. Remove the blade and fold in the strawberries.
6. Pour about 1/4 cup (120 ml) of batter inside each muffin liner.
7. Bake for 15 minutes or until the tops are golden brown.
8. Remove and cool to room temperature before serving.

Yes, it is winter, but a fruit smoothie just sounds good for lunch.
Serves 4

1 2/3 cup (400 ml) organic (dairy-free) yogurt (Plain is less sweeter or vanilla yogurt for sweeter taste.)
1 1/2 cups (300 g) organic peaches, sliced and partially frozen
1/2 cup (100 g) organic strawberries, partially frozen
2 cups (400 g) ice chips
optional: try raspberries or blueberries

1. Blend all ingredients in a blender.

  • Drizzle fresh strawberries with balsamic vinegar, sprinkle with minced basil, and top with dollop of organic (dairy-free) yogurt.
  • Drip strawberries in melted extras-dark chocolate.
  • Sliced strawberries to a salad of mixed organic lettuce and spinach, top with organic pine nuts.
  • Blend in a food processor: 2 organic kiwi with the skin (vitamins are between the skin and the fruit), strawberries, (dairy-free) plain yogurt, organic honey, and 1/2 cup (120 ml) (dairy-free) milk.
  • Strawberry Salsa: organic: avocados and lime juice, strawberries, chopped cilantro or parsley, minced onions, diced organic mango, diced jalapeño or green chiles.

*BEWARE: Environmental Working Group (EWG) found that strawberries have the highest pesticide load of any fruit or vegetable, pays to choose organic!
