Gluten-Free/Dairy-Free Banana Bread
Makes a 9-inch (23 cm) loaf
Preheat the oven to 350F (175C)

3 Tbs. (45 ml) water
3 cups (720 ml) rolled organic oats
⅔ cup (160 ml) coconut sugar or organic sugar
1 tsp. (5 ml) baking soda (bicarbonate of soda)
½ tsp. (2,5 ml) sea salt
1 tsp (5 ml) cinnamon
3 ripe organic bananas
½ cup (120 ml) organic applesauce
2 Tbs. (30 ml) olive oil
1 Tbs. (15 ml) organic chopped walnuts or pecans
1. Lightly spray the loaf pan.
2. Mix the flaxmeal and water together and set aside.
3. Add the rolled oats to a food processor and grind into a flour.
4. In a bowl, mix the oat flour with the sugar, baking soda, salt, and cinnamon.
5. In a different bowl, mash the bananas with a folk.
6. Add the flax mixture, applesauce, and oil.
7. Pour the dry ingredients into the wet and mix well.
8. Pour the batter into the pan and top with chopped nuts.
9. Bake 50-60 minutes or until an inserted toothpick in the middle comes out dry.
