We had a salad bar with our meals for four to eleven people. It is a nice switch from "a salad" and lets everyone pick, choose, and pile on as much or as little as they want.

Have a large bowl of mixed lettuce. Place the "choices" in smaller bowls. What is left over, makes an easy salad the next day. Add some different vegetables, beans, and cheeses, example: Jerusalem artichokes, endives, edamame beans, goat cheese. Provide several types of salad dressing.

Use can beans, easier than cooked beans. Have an assortment:
  • red
  • black
  • chickpeas or garbanzo
  • pinto...

C. cheeses- graded, sliced, or crumbled
  • blue cheese
  • feta
  • goat cheese
  • a hard cheese
  • mozzarella...
D. seeds
  • pumpkin
  • flax
  • sunflower...
E. organic nuts- chopped
  • walnuts
  • almonds
  • raisins
  • dried cranberries...
F. garnishes- slightly chopped leaves of
  • mint
  • parsley
  • cilantro
  • basil...
