The salsa is great either with orange or lime juice.

Salsa con laranxa ou limón (Galician)
Salsa com laranja ou limão (Portuguese)
Makes 2 cups(480 ml)
Serve with favorite chips.

4 medium organic tomatoes, halved or 2 cups (480 ml) of canned organic tomatoes
cilantro or parsley: about 1/2 cup (120 ml) fresh leaves or 3 Tbs. (45 ml) dried
2 crushed garlic
3 Tbs. (45 ml) olive oil
2 Tbs. (30 ml) organic orange or lemon juice
1/2 tsp. (2 ml) red pepper flakes
salt and ground black pepper (to taste or optional)

1. In a food processor add: tomatoes, cilantro or parsley, garlic, olive oil, orange or lime juice, and red pepper flakes.
2. Pulse until mixture is chunky.
3. Season to taste.
