Good breakfast is necessary to start a day: nutritional, energy, better concentration, and control weight. For decades, we usually have a fancy Sunday breakfast, a nice table setting, with background music. We try to eat outdoors as much as possible, even been know to sit with our coats on, with snow on the ground in Germany. Mike prepares egg dishes. This Mexican dish is great for any morning.
Heuvos Rancheros (Spanish)
Serve 6
olive oil
1 thinly sliced onion
3 sliced garlic cloves
2 organic sliced peppers, two different colors
2 fresh chiles or a small can of green chiles
3 bay leaves
salt and pepper to taste
1 14-ounce (420 g) organic tomatoes
2 large organic sliced tomatoes
6 organic eggs
6 tortillas (organic corn, flour, wheat, or gluten free)
6-ounces (185 g) cheddar or pepper jack cheese (or dairy free cheese)
Cook in a large cast-iron frying pan with a lid. Pre-heat the oven to 350℉ (180℃) if you want to heat the torilla or 15 seconds in the microwave (much easier)
1. On high, add some olive oil, onions, garlic, peppers, chills, bay leaves, pinch of salt and pepper.
2. Stir and cook 15 minutes.
3. Mash in the tomatoes (or use crushed can of tomatoes)
4. Bring to a boil, turn down to medium heat, cook 5 minutes. Remove the bay leaves.
5. Cut out the center of the sliced tomatoes and lay on the top of the stew
6. Use a spoon to make small wells in the middle of the tomato slices.
7. Crack an egg into each well to poach in the juices.
8. Cover with a lid. Cook 5-6 minutes.
9. Warm the tortillas either in the oven or in a microwave.
10. Take the lid off the pan. Check the eggs the way you like them.
11. Turn the heat off and take the pan to the table with the tortillas.
12. Grate cheese into the tortillas, spoonful of egg, some tomato stew on top, wrap, and eat.
Optional:
- chopped broccoli florets
- more garlic
- hotter chilies
- serve with rice, fried potatoes, or warm black beans
- bottle of Tabasco sauce on the table
- sliced avocadoes
- Mexican cheeses
