We receive a weekly box of organic fruits and vegetables now. What is great, is all the different items we are eating, which we would probably not buy nor find in our local supermakets and winter open markets. Bok choy is one of these.
白菜鸡肉或豆腐 (Chinese)
/báicài jiròu può dòufu/
鶏肉や豆腐とチンゲン菜 (Japanese)
/toriniku a tofu to chin gensai/
Serves 3
Marinade:
1 lb (450 g) organic boneless chicken breasts or package of organic tofu
2 tsp. (10 ml) ginger
1 tsp. (5 ml) brown sugar
1/2 cup (115 ml) Teriyaki, soy sauce, or liquid amines-gluten free
1. Mix sauce, ginger, sugar in a bowl.
2. Add the chicken or tofu cubs.
3. Marinate at lest an hour or longer. We made it in the morning and marinade for 7 hours!
Grilling:
1. Grill the chicken for 10 minutes or tofu a few minutes on both sides.
2. Dice the chicken into bite size or cube the tofu. Set aside.
Vegetables:
2 Tbs. (30 ml) olive oil
2 chopped baby bok choy
1 Tbs. each: minced garlic, ginger, cornstarch
3 Tbs. (45 ml) sesame oil
1/2 Tbs. (7 ml) chile paste or Dutch/Indonesian Samba
3/4 cups (165 ml) organic chicken or vegetable broth
8 oz (160 g) sliced organic mushrooms (optional)
一 Add oil and 2 Tbs. (30 ml) of sesame oil to a wok. Sauté.
二 Add garlic and bok choy. Cook 1-2 minutes.
三 Optional-add mushrooms for 10 minutes
四 Add chili paste and broth. Cook 2-3 minutes.
五 Add the chicken or tofu. Mix.
六 Serve with rice or Japanese rice noodles.
