Sweet, minty, relish goes well over meat, fish, or vegetables.
Makes 4 cups (800 g)

3 cups (600 g) diced organic pineapple
1/2 cup (100 g) each diced organic: red onion, red bell pepper, and cucumber
1 small jalapeño or serrano, diced
2 Tbs. (30 ml) organic lime juice
1 Tbs. (15 ml) olive oil
1/2 cup (100 g) chopped mint
optional: 2 Tbs. (30 g) organic sugar

1. Combine all the ingredients in a large bowl.
2. Serve over your favorite dish.
