It hits the spot on a summer evening or take along on a picnic.

A. Mix together

1 can of organic navy beans
1 each: organic: bell pepper, cucumber, and red onion (all chopped)
oregano to taste

B. Dressing

3 Tbs. (45 ml) olive oil
2 Tbs. (30 ml) lemon juice
1 Tbs. (15 ml) chopped fresh dill (or 1 tps./5 ml dry dill)
1 chopped garlic clove
1/2 tsp. (2,5 ml) black pepper
optional: 1 Tbs. (15 ml) chopped wheatgrass 

C. Pour the dressing over the bean mixture. It can be refrigerated and later served at room temperature.
