Teff is a 5,000 year old Ethiopian grain.
Makes 3
1 burger = 4g of protein

1/2 cup (120 g) teff (is gluten free)
1 1/2 cup (360 ml) water
1 tsp. (5 ml) each thyme or other spices and combinations
2 or minced cloves of garlic
1/4 (60 ml) sea salt (optional)
3 chopped scallions
1 Tbs. (15 ml) sesame oil

1. Bring to boil in a saucepan: teff, water, spices, garlic and optional salt
2. Cover and simmer for 15 minutes. Stir once or twice at the end of cooking.
3. Spread the cooked teff in a shallow pan to cool.
4. Add scallions and from into 3 patties.
5. Heat a nonstick skillet which is lightly sprayed with oil.
6. Fry until browned on both sides.
7. Top with cheese, turn the heat off, allow the cheese to melt.
8. Add toppings as you like (lettuce, mustard, tomato, etc.) and place in a bun or eat as a side dish with other foods.
