(Arabic) الحمص والسمسم الإنخفاض
a plate of mezze

Mezze is the eastern Mediterranean form of the Spanish tapas. Served with coffee or tea and some pastries...perfect party food.

1 cup (175 g) dried chickpeas, soaked overnight
juice of 2 organic lemons
2/3 cup (150 ml) tahini paste
2 garlic cloves
1 tsp. (5 ml) sweet paprika
2 Tbs. (30 ml) olive oil
1 Tbs. (15 ml) chopped parsley

1. Bring water to boil and add the drained chickpeas.
2. Boil for 10 minutes and reduce the heat, simmer for 1 1/2 hours or until they are very soft.
3. Use a food processor, purée chickpeas with lemon juice, tahini, garlic, and salt to taste (optional) until a smooth, grainy paste.
4. Arrange the hummus in a small bowl or plate.
5. Mix paprika into the oil and drizzle it over the hummus in a swirl.
6. Sprinkle with chopped parsley.

You could just buy the hummus, drizzle the paprika and oil and add chopped parsley, but how much fun is that?
