酸甜酱
                                  /suān tián jiàng/

If you do not have any sweet and sour sauce or just want to try making it, here are three recipes.



General steps:
一 . Press the ginger juice into a saucepan.
二 . Add sugar, vinegar, water or pineapple juice, and sherry.
. Bring to a boil and stir in the cornstarch mixture to thicken.

酱 
/jiàng yē/
1/2 cup (120 ml) each: vinegar & sugar
2 Tbs. (30 ml) soy sauce
2 Tbs. (30 ml) sherry
3 Tbs. (45 ml) organic tomato sauce
2 Tbs. (30 ml) cornstarch, dissolved into 1/2 cup (120 ml) water or pineapple juice

 
/jiàng èr/
1/2 cup (120 ml) each: vinegar & sugar
4-5 Tbs. (60-75 ml) light soy sauce
1 Tbs. (15 ml) dark soy sauce
2 Tbs. (30 ml) sherry
1 1/2 Tbs. (22 ml) cornstarch
1/2 cup (120 ml) water
酱 
/jiàng san/
1/4 inch (50 mm) thick slice of ginger, chopped
1/2 cup (120 ml) each: vinegar & sugar
6 Tbs. (90 ml) water or pineapple juice
1 Tbs. (15 ml) sherry
1 1/2 Tbs. (22 ml) cornstarch
