Tortilla de Huevo (Spanish)
Makes 1
(If needed, use gluten free tortilla and dairy free cheese.)
1. Warm a flour tortilla.
2. Heat 1 tsp. (5 ml) olive oil over medium heat.
3. Sauté 1/4 cup (60 ml) each chopped organic: zucchini, red bell pepper, mushrooms, a garlic clove, about 3 minutes.
4. Beat 1 large organic egg in a bowl.
5. Stir in the cooked vegetables and a pinch of sea salt, pepper, and marjoram.
6. Pour mixture back into the skillet over medium heat, cook about a minute on each side.
7. Place a slice of cheese on top and a spoon full of salsa.
8. Slide the mixture onto a flour tortilla. Roll up the wrap.
