Marmalade originally made with quince fruit. Today it is usually a mix of the pulp, juice and rind from oranges, grapefruits, kumquats, or lemons.
marmalade 
"quince jam(Portuguese)

Whisk:
4 Tbs. (60 ml) marmalade
2 Tbs. (30 ml)  soy sauce
pinch of hot chili flakes
squeeze of an organic lemon
1 tsp. (5 ml) olive oil
optional: 1 tsp. (5 m) of  grated ginger and/or sesame oil

Marinate:

  • tofu
  • meat
  • chicken
  • fish
  • vegetables
