Chèvre Fromage à Tartiner (French)

1/2 cup (120 ml) room temperature goat cheese
2 tsp. (10 ml) chopped thyme (with flowers if possible)
2 tsp. (10 ml) zest of organic lemon
1 minced garlic clove
5 tsp. (25 ml) olive oil
16 slices of French baguette
1. In a small bowl, mix the thyme, lemon zest, and garlic.
2. Place the goat cheese in another bowl.
3. Mix half of the herb mixture into the goat cheese.
4. Add olive oil to half of the remaining herb mixture.
5. Form cheese into rounds, flatten slightly.
6. Place in the center on a plate.
7. Spoon oil-thyme mixture over the top of the cheese rounds.
8. Serve with:
- baguette slices around the cheese rounds.
- celery sticks.
- organic red or yellow bell pepper strips.
- organic sliced or baby carrots.
- Belgian endive leaves.
- raw organic broccoli.
- stuff raw organic mushrooms (remove the caps, save for another dish).
- stuff jalapiños (remove the seeds).
- boiled organic finger potatoes (look for the variated color potatoes).
