Sauerkraut (German)
"sour cabbage"* 
Here are two ways to serve the chopped, fermented cabbage in different ways instead of a condiment for meat and Bratwurst

Sauerkraut-Salat (German)
Serves 8
Refrigerate over night

1 cup (240 ml) each: sauerkraut and diced organic celery
1 organic diced bell pepper
1 organic diced onion
¼ cup (60 ml) organic sugar
½ cup (120 ml) cider vinegar
1 jar (2-ounce/55 ml) diced pimientos

1. Mix and refrigerate over night.

Sauerkraut-Sandwich
It sounds odd; I doubt if Judy or Alia will try it. I do not want the large jar of sauerkraut to spoil, so for today's lunch, I made this sandwich. I like it so much, I made another the next day!-Mike
1. Two slices of bread.
2. One slice has goat cheese and hummus.
3. Other slice has sauerkraut.
4. Close and eat.  

* Good source of vitamins C, B, and K

A bite of history: Sauerkraut is not native to Eastern European and Germanic cuisines! Back-step to the 13th century with Genghis Khan's Mongols invaders into Europe who carried it in their saddlebags.
