I usually just add rosemary to roasted potatoes. Or last night, I added chopped onions and half bell pepper. So here is a twist on roasted potatoes.-Mike
Serves 4

1 ¾ pounds (490 g) organic potatoes or 1 large organic sweet potato
1 chopped organic onion
1 tsp. (5 ml) olive oil
2 tsp. (10 ml) cumin
1 tsp. (5 ml) paprika
some organic lime juice
½ chopped organic bell pepper
cilantro or parsley

1. Roast the cubed potatoes and onions in a frying pan with the oil about 15 minutes.
2. Add the bell pepper, cumin, and paprika. Cover and steam until potatoes are tender when poked with a fork.
3. Add the lime juice to taste.
4. Sprinkle cilantro or parsley over the top.
5. Serve as a side dish. 


A lime tree can be grown in a container.
