Lao is located in a landlocked country in Southeast Asia. Surrounded by five countries and once occupied by French, Japanese, and Chinese. All have contributed to today's cousin.
Serves 4
1 Tbs. (15 ml) olive oil
1 organic eggplant, cubed
1 medium onion, chopped
4 medium organic tomatoes, chopped
3 Tbs. (45 ml) brown sugar
8-ounce (224 g) bamboo shoots
2 Tbs. (30 ml) soy sauce (liquid aminos-gluten free)
2 tsp. (10 ml) organic lime juice
1 ½ tsp. (7,5 ml) chile garlic sauce
3 cups (720 ml) bean spouts
½ cup (120 ml) mint
cornstarch (cornflour, maize starch, maize)
1. Sauté eggplants and onions, about 10 minutes.
2. Add tomatoes, sugar, soy/liquid amino, lime juice, and chile. Cook about 3 minutes.
3. Add the bean spouts and bamboo shoots. Cook 2 minutes.
4. Thicken the sauce with some cornstarch and water.
5. Serve garnished with the mint leaves.
