A few simple ingredients and fry on the stove for a great side dish with any meal.
Serves 4
1 ¾ pounds (60 g) organic potatoes or one large organic sweet potato
1 chopped organic onion
olive oil
2 tsp. (10 ml) cumin or to taste
1 organic lime = 2 Tbs. (30 ml) of lime juice
zest of a lime
⅔ cups (160 ml) cilantro or parsley
1. Cube the potatoes, add ½ the lime juice and zest, and onions.
2. Fry in a skillet.
3. Stir in the rest of the lime juice and cumin.
4. Cover and cook until the potatoes are done.
5. Serve with cilantro or parsley on top.
