We have a lot of mint and tomatoes in our garden. Combine them for a refreshing Italian salad.
Insalata di Pomodori e Menta
Serves 6

1/4 cup (60 ml) packed fresh shredded mint leaves
organic tomatoes cut into wedges
sliced red onions
3 Tbs. (45 ml) olive oil
2 Tbs. (30 ml) red wine vinegar
ground black pepper to taste

1. Put the tomatoes, onions, and mint in a bowl.
2. Toss with the oil and vinegar.
3. Seasons with black pepper to taste.
