It is a Moroccan marinade sauce for fish or chicken.
Makes enough for
 4 1/2 pounds (2 kg) of fish
Or save some for another dish.

1 finely chop a large bunch of cilantro or parsley (substitute: coriander and dry parsley)
1-2 minced garlic cloves
2 Tbs. (30 ml) paprika
1 Tbs. (15 ml) each: mint and cumin
1 tsp. (5 ml) graded ginger
1/2 tsp. (2,5 ml) cayenne pepper
1/4 tsp. (1,25 ml) crumbled saffron threads
3 Tbs. (45 ml) olive oil
juice of 1 small organic lemon

1. Mix all ingredients together in a bowl.
2. That is it!

3. Marinating fish or chicken, might need to add a little more oil or 1-2 Tbs. (15-30 ml) of water to thin the sauce.
4. Leave it thick if using as a stuffing for fried fish.
