This is a serving for one, so just increase the ingredients for added servings.
1 tsp. (5 ml) each: organic walnuts and olive oil
2 Tbs. (30 ml) dried organic cranberries
2 cups (475 ml) organic spinach or kale
optional herbs to taste: marjoram, thyme, sage, nutmeg, and/or oregano
optional seeds: pumpkin, sunflower, teff, and/or flaxseeds
1. Heat the oil in a skillet over medium heat.
2. Add the cranberries and walnuts. Stir and cook about a minute.
3. Add the spinach or kale. Cook until it wilts about 3 minutes.
4. Optional: add any herbs and/or seeds.
