Chill for an hour
3 organic cucumbers, peeled and cubed
3 cups (720 ml) plain organic yogurt or dairy-free yogurt
2 cloves of garlic, crushed
1/2 tsp. (2,5 ml) ground black pepper
1 Tbs. (15 ml) melted (dairy-free) butter
1 Tbs. (15 ml) olive oil
1 Tbs. (15 ml) wine vinegar
2 Tbs. (30 ml) each chopped fresh dill and parsley OR 2 tsp. (10 ml) each dry dill and parsley
1/2 cup (240 ml) chopped organic walnuts
2 crumbled, organic hard boiled egg yolks

A. Mix all ingredients and chill for one hour.
B. Garnish with several mint leaves.
