Herbal vinegars delight the eyes as well as the palate.


1. Choice the type you like, example: thyme, mint, rosemary, red peppers....list can go on. 
2. Next, wash the fresh organic herb stems and leaves, let dry (very important). Warm the white wine vinegar* in the sun for 15 minutes. 
3. Stuff the stems and leaves into a clean jar. 
4. Submerge the herb completely with warm white wine vinegar. 
5. Use a wooden spoon to push floated peppers to the bottom. 
6. Seal the jar (metal lids will rust) and let it stand for 4 weeks out of direct sun. 
7. Stain the vinegar through cheesecloth or brown coffee filter to remove the herbs. 
8. You are ready to use the flavored vinegar in all sorts of dishes, salad dressings, and cooking. 
9. Store in cool, dark area.

(c) cilantro, garlic, whole cloves, and hot peppers
(d) basil, garlic, peppercorns

2. herbal vinegar for international dishes: 
(a) Middle Eastern = mint, lemon, garlic, or thyme
(b) Latin dishes = hot peppers, cilantro, or garlic
(c) Asian = lemongrass, basil, ginger, or flowering Chinese chives
(d) Mediterranean = basil, chives, lavender, marjoram, oregano, parsley, rosemary, or sage
(e) Native American = chive, tarragon, rose blossoms, mint, or sage
(f) Indian = curry leaves, chilly, clove, or ginger

  • parsley, rosemary, & sage...red wine...potato salad, grain or tofu salad
* Try red wine vinegar, rice vinegar, cider vinegar, some balsamic
