The longer this salsa sits, the better the flavor! Plan ahead for a delicious chips and dip, or add to a burrito or in wrap for a luncheon.
A. Add these ingredients to a food processor or chop by hand:
2 Tbs. (30 ml) chia seeds*
1 medium cucumber, peeled and diced1/2 lime juiced
2 Tbs. (30 ml) fresh cilantro or parsley
1/2 cup (120 ml) diced onion
2 cloves of minced garlic flowering chia plant
B. Add one of these or all of them! -3/4 pound (340 g) fresh tomatillos, husks removed and diced
-1 jalapeño pepper, de-seeded and minced
-small can of chilies

* chia seeds:
- come from a flowering plant in the mint family. Native to southern Mexico and Guatemala, it is found in many stores today. It is rich in omega-3 fatty acids.
- 1 ounce (28 g) = 9 grams of fat, 5 mg sodium, 11 g dietary fiber, and 4 g of protein; daily value of 12% iron, 17% calcium, and 23% magnesium
- Add to: smoothies, breakfast cereals, energy bars, yogurt, and/or over salads.
