Fried rice is a great alternative to plain rice dish. It needs to be cold cooked rice before adding these ingredient. My first attempt, went like this: Cook the rice. What? It has to be cold! Put the pot of cooked rice into the freezer for a while. Then continue as "directed", which I did not read beforehand. It turned out ok, so if you "forget", try the freezer method!-Mike

Serves 4 to 6
1-2 chopped green onions
2 eggs (3 eggs if you are adding other ingredients)
pepper to taste
4 Tbs. (60 ml) olive oil, or as needed
4 cups (950 ml) cold cooked rice
1-2 Tbs. (15-30 ml) light soy sauce, oyster sauce, or liquid amines-gluten free
1 cup (250 ml) peas or mixed vegetables
1/4 cup (60 ml) seaweed
1. Lightly beat the eggs and pepper.
2. Heat the wok or frying pan + 2 Tbs. (30 ml) oil.
3. When it is hot, add the eggs. Stir until lightly scrambled but not fried.
4. Remove the eggs to a dish and clean out the wok.
5. Add 2 Tbs. (30 ml) of oil to the wok.
6. Add the cold rice. Stir-fry a few minutes.
7. Stir in the soy or oyster sauce as desired.
8. Add the vegetables.
9. When the rice is heated, add the scrambled egg. Mix.
10. Stir in the green onion and sprinkle seaweed on top.
10. Serve hot with other Asian dishes.
