Paella amb Verdures (Catalan)
Serve 4-6 (main course)
6-8 (appetizer)
8-10 (side dish)
2 chopped organic onions
3 organic leeks, white parts only, chopped
4 organic tomatoes, grated or chopped
olive oil
6 medium artichoke hearts, cut in half and sprinkled with organic lemon juice
3 organic red bell peppers, roasted, peeled and cut into strips
1/2 head of organic cauliflower, broken into florets
1/2 cup (120 ml) organic peas
5 1/2 cups (1300 ml) organic chicken or vegetable stock
4 minced garlic cloves
2 sprigs of minced parsley
1 - 1 1/2 cups (240-300 ml) sofregit*
1 - 1 1/2 cups (240-300 ml) sofregit*
1 pound (455 g) short-grain rice
1. In a flat-bottom pan, add sofregit, artichoke hearts, and bell pepper strips (save some for garnish).
2. Stir in the cauliflower and peas, plus 1 cup (240 ml) stock.
3. Bring to a boil, the simmer for 10 minutes.
4. Stir in the garlic and parsley.
5. Add the remaining stock.
6. Stir in the rice, cook over medium-high heat, without stirring for 20-25 minutes, until the rice is done and liquid has evaporated.
7. Add the extra bell pepper strips on top of the rice about 5 minutes before cooking is completed.
8. Let it stand 5-10 minutes off the heat before serving.

1. Cover the skillet with at least 1/2 inch (125 mm) of oil.
2. Heat for several minutes.
3. Add the onions and reduce the heat. Cook uncovered until the onions wilted and turned golden-brown, to caramelize the onions.
4. Mix in the tomatoes and cook until all liquid has evaporated.
