We like feta. So this marinated sauce for chicken works well.


Φέτα Κοτόπουλο (Greek)
/féta kotópoulo/
Serves 3
Preheat the oven to 350F (175C)

3 organic or free range boneless chicken breast

Italian dressing
olive oil cooking spray
1 tsp. (5 ml) Italian seasoning or more to taste
chopped organic cherry tomatoes
feta cheese

1. Place the chicken and dressing in a plastic bag and marinate for 30-60 minutes in the refrigerator.

2. Remove the chicken from the marinate, sprayed a baking dish, and add the chicken.
3. Sprinkle with Italian seasoning on both sides.
4. Top with the cherry tomatoes and feta.
5. Bake for 20 minutes and turn over to bake another 20 minutes or until the chicken is not pink in the middle.
6. Cook the rice or quinoa (both gluten-free), or couscous (non-GF).
