Add hoisin, Sriracha, and rice wine vinegar to this salad and the flavors will stay with you all afternoon. It is a good dinner meals, also.

/thịy p̄hạk kād h̄xm chām kị̀/
Serves 2-3

1 Tbs. (15 ml) each: olive or sesame oil, grated ginger, rice wine vinegar
1 pound (450 g) ground organic chicken
2 minced garlic cloves
1/2 chopped onion
1/4 cup (60 ml) hoisin sauce*
2 Tbs. (30 ml) soy sauce or gluten-free liquid amino
1 tsp. (5 ml) Sriracha (hot chili sauce)
1 (8-ounce) (225 g) can of organic water chestnuts, drained and diced
3 organic green onions, thinly sliced
5 cups (1180 ml) organic mix lettuce

1. Heat oil in a saucepan over medium-high heat.
2. Add chicken and cook until browned, crumbing the chicken as it cooks. Drain excess fat.
3. Add and cook onions about 1-2 minutes.
4. Add chestnuts and green onions for another 1-2 minutes.
5. Put some mix lettuce in each bowl.
6. Spoon chicken over the greens.

Homemade
Hoisin Sauce
海鲜酱
/hǎixiān jiàng/

4 Tbs. (60 ml) soy sauce (or gluten-free liquid amino)
2 Tbs. (30 ml) black bean paste
1 Tbs. (15 ml) molasses
2 tsp. (10 ml) each: toasted sesame seed oil and white vinegar
pinch of garlic powder and black pepper
10 drops Chinese hot chili oil or Tabasco sauce

1. Whisk all ingredients.
2. Pour into a glass jar with a tight lid.
3. Refrigerate for several months.
