Days are hot and long in Cuba during the summer months. A refreshing cucumber salad hits the spot.
Ensalada de Pepino Cubana
Serves 4-6
1 large organic cucumber
1-2 Tbs. (15-30 ml) white wine vinegar
1-3 tsp. (5-15 ml) organic sugar
goat cheese
1/3 cup (80 ml) olive oil
2 Tbs. (30 ml) chopped chives or green onions or 2 tsp. (10 ml) dried chives
ground black pepper to taste
mix organic lettuce
1 Tbs. (15 ml) minced mint or parsley or 1 tsp. (5 ml) dried
1. Thinly slice the cucumber and toss with the vinegar and sugar. Set aside.
2. In a small bowl, mash goat cheese and oil with a folk.
3. Stir in the chives and black pepper.
4. Line a plate with the lettuce.
5. Arrange the cucumbers over the lettuce.
6. Spoon the dressing over the cucumbers and sprinkle with the mint.
