Avocados were on sale. Here is a Cuban side dish with any main meal.
Ensalada de Aguacate (Spanish)
Servers 4
chill the avocado

1 large avocado
3 tsp. (15 ml) each: olive oil and vinegar
1 small sliced organic onion

1. Peel and cut the chilled avocado into large bite size pieces.
2. Mix vinegar and olive oil and pour over avocado pieces.
3. Garnish with sliced onion.
