I have some left over cactus leaves, so I added some to guacamole.-Mike
Guacamole con Cactus (Spanish)
Makes 1 cup
for 2 cups
just add two more avocados


2 ripe avocados
1 Tbs (15 ml) each: organic lemon juice; chopped onion & either cilantro or parsley
2 minced or finely chopped cloves of garlic
1 chopped organic tomato
1/4 cup (60 ml) chopped cactus in the refrigerator section in most Hispanic stories
 If you use a cactus leave, the thorns have to be removed by scrapping them the side of a knife. (I paid the extras and bought the pre-chopped cactus.)

1. Scoop out avocado after removing the seed. Place in a bowl.
2. With a folk, coarsely mash avocado.
3. Add the other ingredients and mix well.
4. Longer it sits, the stronger the flavor.
5. Serve by itself, as a dip or spread, stuffed raw vegetables, or we had it on top of fish.
