Preheat the oven 375℉ (190℃)
Mixture:
  • 1 cup (250 ml) each: chopped onions and organic bell pepper
  • soft tofu (14-oz/420 ml)
  • 16-oz (500 ml) organic tomato sauce
  • 12-oz (375 ml) (=1 1/2 cups/7 ml) organic kernel corn, drained
  • 1/2 cup/2 ml olives
  • 1 clove garlic, minced
  • 1 Tbs./15 ml sugar
  • 2-3 tsp. (10-15 ml) chile powder
  • 1 1/2 cups (7 ml) shredded cheese (Monterey or jalapeño) (or a dairy free cheese)
corn meal topper: 
  • 3/4 cup (180 ml) organic yellow corn meal
  • 2 cups (480 ml) cold water
  • 1 Tbs. (15 ml) organic butter
A. Mixture:
1. Cook onions, pepper, and tofu until vegetables are just tender.
2. Add the next 7 ingredients.
3. Simmer 20-25 minutes or until thick.
4. Add cheese, stir until melted.
5. Pour into 9x9x2 inch (23x23x5 cm) baking dish.

B. Corn Topping:
1. Stir meal and salt into cold water.
2. Cook and stir until thick.
3. Add butter. Mix well.
4. Spoon over "mixture", making narrow strips.

C. Cook: for 40 minutes or until browned.
