Catalan cuisine has basic, simple recipes. This vegetable dish is good with chicken.
Bledes amb Panses i Pinuyons (Catalan)
Serves 4 side dishes
2 pounds (910 g) organic Swiss chard, remove stems and coarsely chopped
2 crushed garlic cloves
olive oil
1/3 cup (2,4 g) raisins, set in water for 10 minutes, then drain
1/3 cup (2,4 g) organic pine nuts (or other type of organic nuts), lightly toasted
1. Blanch the chard in boiling water for 10-15 minutes. Then immediately drain and press the water out.
2. In a large skillet, sauté the garlic in little oil until golden but not browned. Remove and discard the garlic (save for another dish).
3. Sauté the raisins and pin notes in the garlic oil.
4. Stir in the chard, sautéing for 3 minutes on low heat, while stirring.
