Φέτα σαλάτα με σταφύλια και μέντα (Greek)
/féta saláta me stafýlia kai ménta/
Serves 4
3 cups (570 g) organic seedless grapes, cut in half
1/2 cup (115 g) feta cheese
1/4 cup (55 g) chopped organic walnuts or pecans
2 Tbs. (30 ml) chopped fresh mint or 2 tsp. (10 ml) dried mint
1 Tbs. (15 ml) squeezed organic lemon juice
2 Tbs. (30 ml) olive oil
Αʹ 1. Combine the grape halves, feta cheese, nuts, and mint in a bowl.
Βʹ 2. In a smaller bowl, whisk the lemon juice and olive oil.
Γʹ 3. Pour the dressing over the fruit and toss.
Δʹ 4. Let it sit at room temperature for 30 minutes before serving.
When buying grapes, gentle shake organic grapes on a stem. If the grapes stay on the vine, they are fresher. In plastic bag, avoid sticky, moist or contain loose grapes.
Bite of nutrition: Golden raisins have almost three times more antioxidant than dark color raisins.
