Get children involve in cooking, and they might just eat "strange" foods while having fun. Plus, they learn cooking and measuring skills.
Serve 4
1 bunch of organic Swiss chard, remove the stem ends and save
1 Tbs. (15 ml) olive oil
1 small organic red onion, cut into half, then thinly sliced
1 organic apple, cored and thinly sliced
1 Tbs. (15 ml) organic lemon juice
¼ cup (60 g) raw orangic sunflower seeds*
optional:
- pinch of red pepper
- minced garlic
- splash of white wine
- little organic sugar or maple syrup
- grated ginger root
1. Slice the Swiss chard ends into small pieces. Place in a bowl.
2. Roll the leaves and slice them crosswise.
3. Heat the oil over medium-high heat.
4. Sauté the onions about 3-4 minutes.
5. Stir in the chard stems and apple slices. Cook about 4 minutes.
6. Add the greens, stir, cook another 4 minutes.
7. Add the lemon juice (any optional items)and turn the greens to coat.
8. Serve on a platter with sprinkled sunflower seeds over the top. Sever hot.
