Makes 2 ½ cups (560 g)
3 Tbs. (45 ml) olive oil
4 thinly sliced shallots
4 ounces (115 g) organic mushrooms (single type or mixture of mushrooms), sliced
2 Tbs. (30 ml) (gluten-free) flour
2 cups (475 ml) organic milk or diary-free almond milk
½ cup (120 ml) white wine
pinch or two white pepper
herbs that go with mushrooms: coriander, marjoram, oregano, rosemary, tarragon, thyme
1. Sauté shallots in the olive oil until lightly brown.
2. Add the mushrooms.
3. Sauté a minute, then sprinkle on the flour, stir until it is absorbed.
4. Slowly stir in the milk, white wine, and any herbs.
5. Simmer until slightly thickened.
