This has all the taste and enjoyment without the bacon, ham, and chicken liver dishes from New Orleans.
Severs 4

1 cup (240 ml) brown rice
2 bay leaves
olive oil
1 chopped onion
1 organic diced bell pepper
1 stalk of organic celery
1 tsp. (5 ml) cayenne pepper
3 minced garlic cloves
1/4 cup (60 ml) each: fresh thyme and parsley (= 4 tsp. dry each) 
15-ounce (450 g) organic red kidney beans, drained
3 chopped scallions
1 organic lemon
Tabasco sauce (optional)

1. Cook the rice from the package instructions.
2. Drain and rinse under cold water. Sit it aside.
3. Sauté the onion, bell pepper, celery, garlic, scallions in oil and the bay leaves.
4. Stir in the cayenne pepper, thyme and parsley. 
5. Cook about 10 minutes.
6. Remove the bay leaves and stir in the rice. Simmer 5 minutes.
7. Transfer to a bowl or patter.
8. Squeeze lemon juice over the top.

Enjoy hot, warm, or cold 
with the bottle of tabasco sauce for
those who what some "heat" to their Cajun rice.
