Here is a salad with protein. Serve with a loaf of crusty (gluten and diary free) bead on the side or "Avocado Bruschetta"*
Serve 4

1 small organic onion, peeled, cut in half and grated
2 Tbs. (30 ml) white wine vinegar
6 Tbs. (90 ml) olive oil
mixture of organic lettuces and spinach leaves
(dairy-free) cheese (grated cheddar, sliced goat, or cubed feta)
3 organic apples, cored and cut into cubes
sliced organic radishes, add the washed leaves to the lettuce
choice of herbs: Italian spice, parsley, basil, thyme, etc.

1. In a jar with a lid, add  ½ tsp. (1,25 ml) grated onion with the vinegar, olive oil, and herbs. Mix and set aside.
2. Wash the lettuce and spinach, spin dry.
3. Tear the leaves into pieces.
4. Add some cheese in a shallow bowl.
5. Add the lettuce, spinach, and radishes.
5. Shake the dressing, pour over the salad, and mix.
6. Add the rest of the cheese and toss briefly. 
7. Sprinkle the apples over the top but do not toss.
