Serve 4 
Preheat oven 575℉ (300℃) 
for 5 minutes

A. Mix together:
1 tsp. (5 ml) each: nutmeg and sea salt
10 large organic carrots

B. Roast the carrot mixture in the oven for 20 minutes.

C. Add to the carrots:
8 whole garlic cloves
¼ cup (60 ml) olive oil
1 Tbs. (15 ml) rosemary

1. Cook about 25 minutes.

  • About 1530 CE the English first recorded the word "carrot" <Middle French carotte <Late Latin carōta < Greed  καρωτόν /karōton/ <Indo-European root ker- "horn" due to its horn-like shape.
  • The wild ancestors of the carrot probably came from Persia (today: Iran and Afghanistan) some 11000 yeas ago!
  • 100 g carrots (about ½ cup) = 100% daily value of vitamin A
