Nuts are a source of energy and nutrients. Add chicken for more protein, plus some spicy sauce for an Asian dinner.

Serves 3-6 people
Preheat oven to 375F (190C)

6 pieces of boneless, skinless organic chicken thighs or breasts
½ can organic coconut milk
1 12-ounce (340 g) organic nut butter (of your choice)
1 Tbs. Sriracha or other chili sauce
chopped organic mushrooms
organic broccoli florets
finely chopped green onions
pinch or two red pepper flakes to taste

1. Whisk together coconut milk, nut butter, Sriracha/chili sauce, and red pepper flakes.
2. Boil chicken for 7-10 minute until cooked thoroughly and not pink in the middle.
3. Place broccoli, mushrooms, and onions in a casserole dish and pour sauce over the top.
4. Bake, covered for 25 minutes.
5. Serve with sweet potatoes or rice.
