Makes 2 main dishes
Preheat oven to 375F (190C)
1 organic acorn squash
2 Tbs. (30 ml) coconut or olive oil
2 Tbs. organic nut butter
1. Cut the squash in half lengthwise and scoop out the seeds.
(a) Seeds can be washed, dried, and eaten.
2. Coast the squash with 1 Tbs. (15 ml) oil on each side.
3. Place on a baking sheet, cut-side up.
4. Bake for 30 minutes or until tender.
5. Remove from the oven and coat each half with 1 Tbs. (15 ml) nut butter.
6. Bake about 5 more minutes or until golden brown.
