'Need a quick side dish for the holidays?
Serves 6
-3 cups (600 g) shredded organic carrots
-2 Tbs. (30 ml) each: red wine vinegar and olive oil
-pinch or two of paprika
-chop handful of herbs that go with carrots: basil, cinnamon, coriander, cumin, curry, dill, fennel, garlic, ginger, mace, nutmeg, parsley, rosemary, sage, and/or thyme
-½ cup (100 g) pomegranate seeds
1. Whisk red wine vinegar and oil.
2. Add the dressing to the carrots. Toss.
3. Mix in the herbs and pomegranate seeds.
